Soy Sauce Fried Chicken - 궁보기정 (좌종당계 左宗棠鷄)
boneless
drumstick 300g
remove the skins and chop into proper size
curry powder 1T +
rice wine (cheongju) 1T + soy sauce 1T
peppers + ginger juice
marinade about 10 minutes
dredge with potato starch + 1 egg
fry twice
remove oil with paper towel
onion + green & red peppers
sauce - water 1/2Cup + rice wine (cheongju) 1T
+ soy sauce 1/2T + oyster sauce 1/2T
+ sugar 1t + potato starch 1T + peppers
crushed garlic, finely chop scallion, dried peppers
put some oil and stir-fry until having a strong scent
add a little bit of rice wine (cheongju) and soy sauce
stir-fry well
add onion
add the sauce
add fried chicken, tossing to coat well
put all peppers
tossing to coat well
and put sesame oil lastly
