Stir-fried Noodle with Okonomiyaki Sauce - Japanese Food



Stir-fried Noodle with Okonomiyaki Sauce
Osaka (Kansai)-style okonomiyaki fried noodle






shrimp, green mussel, small octopus






bacon, onion, cabbage, mushroom






to make okonomiyaki sauce (two portions)
- tomato ketchup 5T + worcestershire sauce  5T
+ rice wine (cheongju) 3T + cooking wine 4T + sugar 2T
+ demi glace sauce 2T + salts and peppers

if you don have demi glace sauce,
you can use oyster sauce 1T + worcestershire sauce  1T






let it simmer on low heat stirring constantly







boil some udon and rinse with cold water

udon (noodles) - thick white noodles made from wheat flour, salt, and water






oil the frying pan and put sliced galic and bacon






put onion






add shrimp and green mussel





add mushroom and cabbage





fry quickly in high heat





put the noodle






pour the okonomiyaki sauce







stirring constantly






put small octopus





stir quickly







add sesame oil or pepper oil




 pepper oil
